Ive had a month to think about how I wanted to word this last post, and have yet to come up with anything that sounds remotely like I want it to.  It really should go without saying, but I feel like I need to say it.  I just don’t know how…and it seems so…trivial to post it here, in the middle of all my messy posts about silly things.

To say I am thankful for my family, and my cats, and food – and then to say I am thankful to God, just seems so…wrong.  Like I am adding a last minute note.  A clause.  An “Oh and btw?”  And that’s not what I wanted it to be.

I cant be thankful, I couldn’t be thankful, if it weren’t for God.  I wouldn’t HAVE anything TO be thankful for if it weren’t for Him.  I would have no reason.  No point.  Everything that I am thankful for?  Would be mere fillers.  It wouldn’t satisfy me.  I wouldn’t be thankful for it.  I would always be wanting more.  I wouldn’t have ANTHING.

“For from him and through him and for him are all things.
To him be the glory forever! Amen.” – Romans 11:36

Im not just talking about the stupid things that I have pointed out this month.  With or without…STUFF…I can still be thankful.  Because I have more than stuff.  I have more than things that wear out.  And because I have Him, I can be thankful – that when these things break, and wear out…I still have Him.  And all that He has given and done for me.  And that means more than good weather, and good food.

Thankfulness is not just for one month.  For 30 things I can or cant live without.  Thanksgiving.  Is more than one day a year where we gather around a table and stuff ourselves silly.  It should be year round.  Daily.  Minute by minute.

I have more…than just stuff.

I hope that as we move from “Thanksgiving” to “Christmas” I atleast can remember this season is the REAL season for thanksgiving.

Ive been somewhat…obsessed with casseroles lately.  I don’t normally like them – I prefer to keep things separate, but lately, with all the leftover turkey and such, casseroles have found their way into the oven more than once this week alone.

The first one was similar to turkey with cheese sauce over mashed potatoes.  Which was better than it sounds.  Last night I did a take on that, only used rice instead of potatoes – and decided to add some different vegetables in too.  I think its probably one of my new favorites, and Im wishing we had more turkey!  Im sure you could add chicken instead tho, so it will probably show up again in the near future.

I hate recipes that dont have pictures – but I honestly didnt think this was going to be worth posting, so didnt take any pictures.  Maybe next time.  🙂

Broccoli Rice Casserole

  • 2 cups chopped and steamed broccoli
  • ½ onion
  • 2 stalks celery
  • 1 ½ cups chopped turkey (or chicken)
  • ¼ cup butter
  • 2 tablespoons flour
  • 1 ½ cups milk
  • 1 ½ cups cheese
  • 2 cups cooked rice
  • Salt
  • Pepper
  • Cayenne pepper (optional)

Sauté onion and celery in 2 tablespoons butter.

Melt the rest of the butter in the same pan, add flour and gradually stir in milk until smooth.  Add salt, pepper and cayenne.  Increase heat and cook until thick – stir constantly.

Add cheese, stir until melted.  Add steamed broccoli, rice, and turkey.

Pour into large casserole dish.

Bake until bubbly – 15 minutes.

*For crunchy top you can melt a little butter and stir in crushed corn flakes, topping the dish before baking.

Yum!

Today I am thankful for…time.  There just doesnt seem to be enough of it lately.  Hours in a day, years in a life…there just doesnt seem to be enough to go around lately, so today I am thankful for time.  I am thankful for the busy hours in my day that seem to fly by, and the years in life that we all have been given.

Today I am thankful for good weather, a funny puppy and a nice road to walk on.

I know it probably doesnt look like it goes together – but after a few weeks of rain and no walks – we finally had a break in the weather and Yoshi and I took a walk up on the hill where she could run all her energies out.  Or, atleast for the hour.
